Objective: I am looking for relief work as Ships Cook/Chief Steward. I will be available February 15, 2006 through May 2006 or perhaps longer while The R/V Wecoma is in the ship yard.

I have been sailing for 11 years on the Wecoma and have had lots of positive feedback from science parties and the crew. I would especially be interested in any cruises that include New Zealand, or Australia, but of course not limited to that.

Duties:
• Prepare menus
• Estimate requirements
• Place orders
• Receive, inspect, load, and store foodstuffs for voyages of thirty days or longer for crews of up to thirty people
• Maintain stocks of linen and steward supplies
• Prepare and serve meals, make soups, salads, sauces, and dressings
• Bake bread, rolls, muffins, biscuits, and desserts
• Prepare entrees and determine cooking times to meet established meal schedules;
• Assign food preparation duties messman
• Supervise messman and train messman in food preparation, clean up, linen supply, and steward supply functions
• Direct the messman in the clean up of galley, messroom, storerooms, refridgerators, and freezers
• Ensure dishes, utensils and equipment are properly washed and are sanitary; maintain sanitation levels of food storage and handling areas
• Participate in fire, lifeboat and other vessel safety drills
